tomatillo salsa (salsa verde)

You guys! I’m obsessed with tomatillo salsa. I eat it with the spoon sometimes, it’s just that good. I’ve always bought it at TJ’s (see this post) and today I made it from scratch. Guess what? I think I like mine better…really. It’s so fresh and bright and full of flavor. I saved half and used the other half to make a pork pazole soup that tastes identical to the one at Nordstrom Cafe. Mmmm!

SALSA VERDE 

1 bunch cilantro

8 tomatillos cut into quarters

2 green heirloom tomatoes

6-8 cloves of garlic

1 jalapeno

3 limes juiced

1 medium white onion

Throw everything raw and cut up into your Blendtec and blend till you get the consistency in the picture. Add salt. Prob 1.5 tablespoons or to taste.

This makes a ton and it’s really SO SO good!
