National Gluten Free Day

Happy National Gluten Free Day

As many of you know I have  Celiac disease, an autoimmune disease that prevents me from eating gluten because it damages my insides (yep, I get so sick!).  I have given up gluten out of necessity in order to lessen my pain and prevent further internal damage to my body.

Below are some easy Gluten Free Recipes

First are these Chicken Stuffed Peppers I love.

Stuffed Peppers with Chicken, Avocado on top and a little dairy-free grated cheese or parmesan cheese

Ingredients: 3 peppers, rotisserie chicken or 2 cans of chicken, avocado, jalapeno, grated cheese and primal kitchen avocado oil mayo

Directions: Use a small knife to cut peppers in half and remove their filling and place on baking sheet.

Chicken Mix:

In a bowl combine – Shredded chicken, 2 TBLS Avocado mayo, Chopped jalapeno, 2 TBLS Salsa Verde. Mix it all up. Add to your peppers.

Another recipe I’m trying this week:

Glazed Pork and Apple Kebabs only takes 30mins

Ingredients: 1.5ilb Pork Tenderloin, 2 Gala Apples, Skewers and Veri Veri Gluten Free Marinade by Soy Vay.

Directions: Cut the pork into 1-inch pieces. Cut each apple into eight wedges, then cut the wedges in half crosswise. Thread the pork and apples onto eight 8-inch skewers. Rub with oil and season with 1/4 teaspoon each salt and pepper.

Grill the skewers, turning occasionally, for 3 minutes. Brush with the Veri Veri Marinade and continue grilling, turning and brushing occasionally with the glaze until just cooked through, about 3 minutes more! Serve with Salad
