Protein Pancakes | #BetterYOULandL

What you’ll need

A blender, guess what-I found a blendtec on sale!

1/2 cup plain greek yogurt

3 egg whites

1 scoop vanilla or chocolate protein powder

1/4 cup gluten free oats or 1/4 cup whole wheat flour (you can choose which one)

1 tsp baking soda

optional – 1/2 tsp cinnamon, 1/2 tsp stevia

Put everything into your blender. Blend until mixed completely. Now add your own spin on these pancakes. Add cinnamon, stevia, chocolate chips, vanilla extract, etc… whatever you and your family want. We are big fans of adding bananas/blueberries to our pancakes. If you add banana – mush up 1/2 banana and add it to the mix above. I triple this recipe when making them for my entire family. My kids also like the combo of whole wheat flour better than the oats. I think it’s a texture thing. I prefer the oats.oats and yogurt - protein pancakes

After your mixture is ready to go, turn on your skillet to medium heat. Spray your pan with coconut oil spray. Now you are ready to start making your pancakes. Spoon the batter onto hot surface to make your pancakes.

When pancakes are done you can add different toppings. I keep fresh fruit options out for my kids, pure maple syrup, and almond butter.
