Wednesday Wellness Tips

Here are 3 things that have helped me get through my week and keep me focused on my overall wellness this week.

The first one, I took the best Peloton ride this week with Kendall Toole . It was a 3o min. Mental Health Awareness Ride. It was such a good ride. I was in tears by the end of it and had all the feels. Do yourself a favor and get on the bike and do this ride. It’s so good.

The second thing, This week I have been a little overwhelmed with life and needed some comfort food asap. Being gluten free it’s a little hard to find some good solid comfort food so I turned to my recipe books and found this Pumpkin Chocolate chip gluten free muffins. I had an afternoon of baking and spending time in my kitchen. I was super impressed with this recipe. Here are all the details.

Recipe:

• 1 1/2 cups gluten-free 1:1 baking flour

• 1 cup sugar

• 1/2 cup brown sugar

• 1 teaspoon baking powder

• 1/2 teaspoon baking soda

• 3/4 teaspoon salt

• 2 teaspoons cinnamon

• 1/4 teaspoon nutmeg

• 1/4 teaspoon cloves

• 1 15oz can pure pumpkin puree

• 2 eggs

• 1/3 cup coconut oil

• 1 teaspoon vanilla

• 1 teaspoon lemon juice

• 1/2 cup chocolate chips, I prefer mini chocolate chips

-Mix wet and dry ingredients separately and then mix all together. Bake 375 for 25-30 min.

 The third thing to help get me through my week was seeing all your before and afters with Liquid Collagen.
