Valentine’s Day Treats

I have a confession! I LOOOOOVE to bake and hate to cook. I get so excited for V-Day because I make my two favorite things. The first OOEY GOOEY RICE KRISPY TREATS are heaven on earth! And gluten free!) You can learn how to make them below. These are better than any other rice krispy treats you’ve had.  The second thing I love to bake are the softest sugar cookies. These are the softest cookies you will ever have!

SOFT PERFECT SUGAR COOKIES + HOMEMADE CREAM CHEESE FROSTING

2 cups sugar

1cup butter

3 eggs

1 tsp vanilla

1 1/4 cup sour cream

6 cup flour

2 tsp. baking soda

2 tsp baking powder

1/4 tsp salt

I use my KITCHEN AID mixer ($100 off right now) to cream together sugar and butter. Add eggs, vanilla, sour cream and mix until everything is combined.

Slowly add flour, baking powder and baking soda

Bake 350 7-9 minutes. (Put dough in the fridge for an hour before rolling out and baking)

Homemade Cream Cheese Frosting

2 1/2 cups powdered sugar

1/2 cup butter

16 oz. cream cheese

1 tsp. vanilla

1/3 cup heavy cream

I use my kitchen aid hand mixer ( 15% off) to mix it all together until fluffy!

Valentine cookie cutters – super cute XOX shapes and different heart shapes. I like these bigger heart shapes too.

I’m always a sucker for these every single Valentine.

Get ready for the best rice krispy treats you’ll ever have!

OOey GOOey RICE KRISPY TREATS 

(I double this)

6 cups Rice Krispies cereal

50 regular marshmallows (about one bag)

2 1/2 cups miniature marshmallows

4 TBLS butter

1/2 tsp. vanilla

pinch of  salt

In a large mixing bowl pour in the cereal

In a medium saucepan set over low heat combine butter and the 50 regular marshmallows. With a rubber spatula stir continuously until mixture is smooth.

Add vanilla and mix in salt

Pour this heated mixture over the cereal in the bowl. Before the cereal is completely coated add the extra 2 1/2 cups of mini marshmallows. This way the mini marshmallows met a little but remain chunky.

Pour the mixture into a greased 9×9 pan and press down with spatula. Chill for 10-15 minutes before serving. I cut mine in big thick pieces.

I sprinkle holiday colors or shapes on top!

You can use this HEART shape pan if you want to present it without cutting them out. Super cute!

Like I said I love to bake and really dislike cooking. It’s my way of showing love to my kids and neighbors. I love to package these treats up and send them out into the neighborhood.

  1. Rice Krispies Cereal isn’t gluten free because of th malt added to the recipe. I have celiacs and made this mistake before but thought I’d help a fellow gf gal out.

    • yikes!!! Starbucks has the rice krispy treat that says gluten free. This entire time I thought rice krispies were gf. hmmm. explains alot. I’ll grab the gluten free krispies for me. thx for the tip. I appreciate it so much xx
