PALEO @TRADER JOES

One of my favorite quick & easy meals is shredded chicken with this mango salsa. I put it all in the crock pot and it cooks for 5-6hours until I can shred it easily. I use this CROCK POT to slow cook my chicken at least once a week to make shredded chicken for tacos, salads and sandwiches.

I also use the salsa verde (green salsa)  in the crockpot at least once a week for tacos. Place chicken in the crockpot and dump an entire jar of the salsa verde over the chicken. Slow cook it all day. Shred the chicken for tacos, chicken salads,etc. I top it with lettuce, cheese, avocado, corn, tomatoes. Everything in my fridge!

I get these every week. We are salsa fanatics in my house. My kids eat it with everything. I use it in my scrambled eggs a lot and I also use the verde salsa with my chicken. The taco seasoning is the perfect amount of spicy for our tacos and taco soups.

The greatest part about PALEO is you can still make baked goods! They actually taste really great and my kids don’t even know a difference. I get my paleo bread, muffin, and treat ideas from Paleo Grubs. I use these mini muffin pans almost every other day. I feel good knowing my kids have healthy snacks to reach for or pack with them during the day. We do a lot of banana muffins. HERE Don’t pass up the Kerry grass fed butter.

Stock up on seasonings! This changes everything. Trader Joe’s spices are inexpensive and I love the grinder built in. IMG_1784

Stock up on the meats at TJ’s! I love prosciutto in my salads and pizza. Get the cauliflower crust now at Trader Joe’s. It’s so good! How good does this salad look. I love this paleo site. The pork belly strips are new for me. I saw this recipe here for paleo pork belly tacos and loved them!

TJ’s produce section is always on point. You can find organic and fresh produce at really great prices. Cheaper than anywhere else I’ve seen. I’ve noticed that I hit this section at least three times a week. I eat a lot of cauliflower rice (it’s so good with the kerry gold butter) and I saute most of my veggies in this OIL . My favorite are the pre packaged Asian veggie stir fry packs. I can eat the entire package. It’s so good. I also make a lot of omelets with the pre chopped onions and carrot mix. IMG_1787

  1. Thank you so much for this amazing list! I am transitioning into a Paleo lifestyle (former Vegetarian), but thanks to IBS + gluten and dairy sensitivities, I found that this lifestyle might work for me. TJ’s is my favorite and I”m so glad they have so many options!
