It’s almost here! Valentine’s Day is always so fun because it’s pretty low effort. One of my love languages is baking for people, so I wanted to post some of my all-time favorite treats to spoil people.

First is the red velvet heart cake. The fun thing about this cake is that it has a chocolate frosting instead of the classic cream cheese frosting. It’s a fun twist and so unexpected when you cut into the cake (or cupcakes!) to find a red velvet cake.

MY FAVORITE RED VELVET CAKE RECIPE 

Red Velvet Cake

Cream 1/2 cup butter

1 1/2 cup sugar

2 eggs

Add 4 Tablespoons cocoa,

1 Tablespoon water

1 Tablespoon red food coloring

1/4 teaspoon salt

1 teaspoon vanilla

2 1/2 cups sifted flour

1 1/2 teaspoon baking soda dissolved in 1 Tablespoon white vinegar

1 cup buttermilk

Add buttermilk alternately with flour.  Beat as little as possible. Divide dough into two 10” round pans filled 2/3 full. Line bottom of pans with parchment and grease and flour sides.  Bake at 375 20-25 minutes or until toothpick comes out clean.

Icing:

6 Tablespoon butter

3 Tablespoon cream cheese

1/2 cup cocoa

4 cups powdered sugar

2 Tablespoon boiling water

2 Tablespoon evaporated milk

1 teaspoon vanilla

Beat butter and cream cheese for 30 seconds.  Add cocoa and 1 cup powdered sugar.  Add boiling water and remaining powdered sugar and milk until desired consistency.

GLUTEN FREE PEANUT BUTTER COOKIES

I had to include something for the gluten-free crowd (ahem) and tried several recipes of peanut butter cookies before finding one that I liked. It was simple and easy and delicious! The first batch I sprinkled with Himalayan Salt (love that salty-sweet combo) and the second batch I attempted to drizzle semi-sweet chocolate on top. Don’t judge my drizzling skills guys… I can’t do it all!

INGREDIENTS

1 cup peanut butter (Skippy works best)

1 cup sugar

1 large egg, beaten

1 teaspoon baking soda

Preheat oven to 350 and grease cookie sheets (or use parchment paper).

Beat together peanut butter and sugar until smooth.

Add 1 beaten egg and baking soda; beat until well-combined.

Refrigerate dough about 20 minutes.

Roll dough into 1 inch balls and flatten with fork tines.

Bake for about 10 minutes, until cookies are puffy and pale golden brown.

***I tried a batch with natural peanut butter and they weren’t nearly as delicious.
