Spiralized Greek Salad | #betterYOULandL

Before we talk salads…my top I’m wearing is Back in Stock, hallelujah!

When I was in middle school we were asked to do a project on the country we’d most like to visit. I chose Greece. Why? Well, I told my teacher I had seen photos of the blue water and white buildings  that looked so peaceful, I wanted to go. Want to the know the real reason? I’m obsessed with greek salad…haha. For real that was my real reason for choose Greece. I thought I could do a whole essay on feta cheese and kalamata olives.

This is a salad I order when we go out and have made different variations at home. One of my favorite ways to make a greek salad is by using my SPIRALIZER!

WHAT YOU’LL NEED: 

SPIRALIZER- I love this one 

CUCUMBER

BELL PEPPER -any color will do, I prefer orange or yellow

KALAMATA OLIVES

CHERRY TOMATOES

BANANA PEPPERS

FETA

 DRESSING- you can make your own or I like the RED WINE & OLIVE OIL DRESSING FROM Trader Joe’s

LEMON

HOW TO PREPARE YOUR SALAD: 

Set up your spiralizer to whatever setting (shape, size) you want your cucumber and bell pepper to be. For the cucumber cut off both tips so it will lay flat against the machine. If this is your first time using a spiralizer, the box will have simple directions to follow. Now start turning the handle and watch the magic happen. For your bell pepper, just pull off the stem before you spiralize. Tip: try and fine a long slender pepper vs. a big round one. It will be much easier to use.

Next add chopped tomatoes, halved olives, a handful of banana peppers. Squeeze one lemon over your salad and add some fresh ground pepper. Next dress with your favorite dressing and top with feta cheese.

I made this salad with one cucumber and one bell pepper and just eyed everything else. It fed 3 people. Feel free to add red onion and to make a complete meal top with grilled chicken or shrimp!
